The Italian grape Arneis makes dry, vibrant whites of refreshing acidity. Aging the wine in stainless steel, as Flavio Marchisio does here, preserves its crisp zestiness.

WHAT YOU NEED TO KNOW

Northern Italy is a treasure trove of brisk, minerally whites. Especially worth seeking out is Roero Arneis. Typically light and lean, the Arneis grape has made a comeback recently in the hills of Roero, in Piedmont (better known for the red wines of Barolo and Barbaresco). Flavio Marchisio and his son Gianmario farm 30 acres of vines outside the Roero hamlet of Castellinaldo. Their bright, unoaked Cascina del Pozzo cuvée comes from a sunny, south-facing vineyard, which produced ripe grapes that give this wine a fuller texture than most.

SMELL IT

Aromas of crushed apples tinged with bay leaves, fennel and spearmint.

TASTE IT

Full and fresh, with juicy apple and apricot flavors and a streak of stony minerality.

SERVE IT

Perfect as an aperitif or with a light main course. Chill well.

PAIR IT

Smoked fish, pastas with lots of fresh herbs, vegetables, shellfish and light white-meat dishes.
