WHAT YOU NEED TO KNOW

France’s Loire Valley is too often overlooked as a source of terrific white wines. Made from the Chenin Blanc grape, Loire Valley whites tend to be bracingly tart, with medium-bodied apple and peach flavors that often have a faint, honeyed sweetness. Domaine Fouet has been making dry, sweet and sparkling wines from Chenin Blanc in Saumur, a small subregion along the Loire River, for six generations. Julien Fouet farms the estate’s 37 acres of old vines organically and ages the wine in caves hollowed out of the local rock, called tuffeau, whose temperatures are perfect for maturing wine.

TASTE IT

Lemon and white peach flavors with bracing acidity and distinct minerality.

SERVE IT

Best with a meal or substantial hors d’oeuvres. Serve well chilled.
