One of the top wineries in France’s Loire Valley, Domaine des Baumard uses the chameleon-like Chenin Blanc grape to make this dry white with riveting acidity and generous fruit flavors.

WHAT YOU NEED TO KNOW

If he made wines in any other French region, Florent Baumard would probably be a household name—at least among wine geeks. But because he’s in the often-overlooked Loire Valley, Baumard’s achievements remain fairly obscure. Chenin Blanc is king in the Loire Valley, and from it Baumard makes Quarts de Chaume, one of the world’s great sweet wines, as well as this cuvée from the Clos du Papillon vineyard. From a fantastic vintage, it shows off Chenin Blanc’s distinct qualities of riveting acidity and generous fruit flavors.

SMELL IT

Minerally scents of lemon chiffon and straw.

TASTE IT

Honeyed melon and almonds with pinpoint acidity and flinty minerality.

SERVE IT

Serve well chilled.

PAIR IT

Meaty fish, shellfish and light poultry dishes; Asian preparations with a bit of sweetness will work well, too.
