Though it doesn’t say it on the label, this Napa Valley Cabernet comes from Calistoga, a subregion that’s long produced stellar reds.
What You Need To Know
Napa-based winemaker Jeff Morgan has an affinity for Cabernet Sauvignon from Calistoga, the Napa Valley subregion that’s home to a slew of famous vineyards. Because it’s in the warmer, northern end of the valley—away from cooling coastal fogs, which creep up from the south—Calistoga Cabernets offer the kind of full-bodied, black-fruited richness and firm tannins that have become synoymous with Napa Valley reds. Morgan makes a kosher Cabernet for his own Covenant brand from a Calistoga site, as well as this black-fruited bottling for financier and vintner Peter Paul. From a single, three-acre parcel just south of the town of Calistoga, it’s a boldly structured bottling that’s perfect with steak.
