Winemaking spouses Xavier Gonet and Julie
Médeville fashioned this bracing Champagne
from top premier cru vineyards.
What You Need To Know
While most Champagne comes from
large producers that purchase grapes from hundreds of small
growers, this bottling comes from a small, family-owned estate.
Julie Médeville and husband Xavier Gonet both come from
winemaking families: Médeville’s roots are in Bordeaux (where
she’s responsible for the acclaimed Sauternes wines of Château
Gilette, among other estates) and Gonet’s are in Champagne. In
2000, the couple released their first Champagnes, using fruit
exclusively from organically farmed grand cru and premier cru
vineyards. Their Tradition cuvée emphasizes Champagne’s steely
side by keeping the wine’s dosage (added sugar) low and its fruit
Green apple and lemon.
Crisp and dry, with stony
citrus and mineral notes.
Well chilled, with food.
Zesty fish and shellfish
dishes; salty and spicy foods.
