This Chilean Cabernet Sauvignon gets its
intensity from grapes grown in volcanic soils.
What You Need To Know
Chile is one of the world’s most
volcanic countries, with more than a hundred active volcanoes
and many more extinct ones. Brought up from within the earth’s
crust, the lean, minerally soils exposed by these hotspots are
terrible for growing things like corn but fantastic for yielding
intensely flavored wine grapes. Bodega Volcanes de Chile is
a new winery that exploits only soils of volcanic origin for its
wines. Backed by businessman and entrepreneur José Yuraszeck,
Volcanes de Chile released its first vintages in 2011. They’re made
by Maria del Pilar Diaz, formerly of Viña Undurraga. Pilar Diaz
sourced grapes for this Cabernet from the warm Rapel Valley,
south of Santiago, and blended in a touch of Syrah for spice.
Cedary black currant and
Fruity cassis, sage
and cedar flavors.
Cellar temperature—the bottle should be
cool to the touch.
Red meats, or even earthy,
substantial vegetarian dishes.
