Dale and Marla Bleecher sold the
grapes from their rugged Napa property near Calistoga to marquee
wineries such as Rudd Estate and Chateau Montelena for years
before deciding to become vintners themselves. While their four
Cabernet Sauvignons can require years of bottle aging to become
approachable, the Table Rock Red wine is made to enjoy sooner.
Fruity Merlot and a touch of Syrah help mellow the Cabernet’s
firm tannins and give it spice and plum notes. Aging the blend for
20 months in French oak barrels helps soften it, too, meaning it’s
delicious right now.
