Spain’s Penedès region lies just
outside of Barcelona and is heralded worldwide for its sparkling
wines, known as cava. The primary grape used in cavas is the
Catalan variety Xarel-lo, which in recent years has been used
more and more to make crisp still whites like this one. Elegance
and finesse is its hallmark, thanks to vines that grow on calcareous
soils just inland from the Mediterranean, which tempers the rigors
of Spain’s hot, dry summers to achieve optimal ripeness.
