Until recently, most Primitivo from Puglia got shipped to Italy’s north in bulk to add warm fruitiness to leaner wines. But in the 1990s, many Puglians began treating this grape with new respect, limiting crop yields to improve quality and aging the wines in oak. Casa Vinicola Botter embodies this shift: Founded in 1928 by Carlo Botter, it became a successful n.gociant, blending bulk wines from all over Italy. In the 1990s, Botter’s grandchildren, Luca, Annalisa and Alessandro, revamped the business to focus on quality. Their succulent Doppio Passo Primitivo gets picked in stages—only the ripest grapes get picked at each vineyard pass—and aged partly in French oak.
